Suggested sliding scale donation is $5-$50 per class since the class size is limited to 12 to facilitate intimate group connection and differentiated support from the instructor. Please be as generous as you can!

We also have scholarship tickets for people who need financial assistance. :)

20% of our virtual wellness club proceeds will support our black wellness fund for sacred activists, healers, and facilitators to come to our retreat center in Mount Shasta for healing, restoration and rejuvenation. We want all frontline change makers and activists to be well-resourced for the loooooooong haul!

Menu: “Goodbye to Summer” Roasted Ratatouille with Chickpeas and Quinoa

Saturday, SEPT 19
4:30-7:00 PM PST

In this month’s offering we will make an easy vegetarian dinner using delicious end of summer produce like eggplant, zucchini, and tomato. This easy recipe is versatile - and we’ll talk about how to mix up the ingredients for an endless combination of easy and flavorful weekday dinner options.

INGREDIENT LIST:
Recipe serves 3-4 

Produce:

  • 1 Eggplant (1 small globe or 2 small Japanese)

  • 1 medium Zucchini

  • 1 Bell Pepper, color of choice

  • 1 Onion, red or yellow 

  • 1 head of Garlic

  • 1 pint of Cherry Tomatoes 

Pantry Items:

  • White Quinoa 

  • 1 can Chickpeas

  • Tomato Paste 

  • Garlic Powder

  • Balsamic Vinegar

  • dry herbs: Basil, Oregano, Thyme or an Italian herb blend

  • Olive oil

  • salt + pepper 

  • optional: Sweet Paprika, Red Chili Flake, Fresh Basil
